Featured Recipe: Fruited Couscous

2 ¼ cups orange juice
1 Tbsp. margarine
1 tsp. orange peel, grated
½ tsp. salt
1 package (10 oz.) quick cooking couscous
1 medium orange, peeled and separated into sections
1 cup red grapes, cut into halves
6 oz. firm tofu, drained and cubed
½ cup golden raisins

1. Bring orange juice, margarine, orange peel and salt to a boil in large saucepan over high heat.
2. Stir in couscous.
3. Cover; remove from heat. Let stand 5 minutes.
4. Fluff couscous with fork; stir in orange pieces, grapes, tofu and raisins.
